Study Abstract

Leuconostoc mesenteroides CECT 9268 was isolated from tocosh, Peruvian traditional fermented potatoes, and has been investigated for its high biotechnological potential in the frame of project Microandes that targeted traditional fermented Andean products of vegetal origin.
